Manakish

A soft, chewy flatbread topped with melted cheese and a sprinkle of herbs, baked until golden. This Middle Eastern favorite is surprisingly easy to make at home with simple ingredients.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • ¾ cup water
  • 1.5 cups mozzarella cheese
  • 1 teaspoon dried oregano

    In a large bowl, mix 2 cups flour, 1 tsp instant yeast, and 1 tsp salt. Add 2 tbsp olive oil and 0.75 cup warm water; stir until a shaggy dough forms.

    Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise in a warm spot for 30 minutes, until doubled.

    Preheat oven to 450°F (230°C). Punch down the dough and divide into 4 equal pieces. Roll each piece into a 6-inch round, about 1/4 inch thick.

    Mix 1.5 cups mozzarella with 1 tsp dried oregano and 1 tbsp olive oil. Spread the cheese mixture evenly over the dough rounds, leaving a small border.

    Transfer the manakish to a baking sheet lined with parchment. Bake for 10-12 minutes, until the edges are golden and the cheese is bubbly and melted.

    Remove from oven and let cool for 2 minutes. Serve warm, drizzled with extra olive oil if desired.
