Ingredients
- 8 oz elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese

Cook the 8 oz elbow macaroni in salted boiling water until al dente, about 7 minutes. Drain and set aside.

In a large pot, melt the 2 tbsp butter over medium heat. Whisk in the 2 tbsp flour and cook for 1 minute until bubbly.

Gradually whisk in the 2 cups milk. Cook, stirring constantly, until the sauce thickens and coats the back of a spoon, about 5 minutes.

Remove from heat and stir in the 2 cups shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.

Add the cooked macaroni to the sauce and stir to coat. Serve hot, garnished with chopped chives and basil if desired.
