Ingredients
- 1 lb large shrimp, peeled and deveined
- 4 tbsp olive oil
- 2 whole lemon (zested + juiced)
- 4 cloves garlic, minced
- 1.5 tsp dried oregano
- 1 medium red onion, cut into 1-inch chunks
- 1 large bell pepper (any color), cut into 1-inch chunks
- ¼ cup fresh parsley, chopped

Pat shrimp dry with paper towels. Combine with 3 tbsp olive oil, lemon zest, lemon juice, garlic, oregano, salt, and pepper in a bowl.

Toss shrimp with onion and bell pepper until evenly coated. Thread onto skewers, alternating proteins and vegetables.

Arrange skewers on a sheet pan. Drizzle with remaining 1 tbsp olive oil. Place under the broiler 6 inches from heat.

Broil 5–6 minutes until shrimp are opaque and edges char, shaking the pan halfway. Shrimp should feel firm when pressed.
