Ingredients
- 1.5 lbs boneless chicken thighs
- 3 medium, halved shallots
- 8 cloves, minced garlic
- 1 tbsp, minced fresh ginger
- 1.5 tsp garam masala
- ¾ tsp chili powder
- ½ cup coconut milk or plain yogurt

Pat chicken dry and season generously with salt and black pepper.

Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

Sear chicken 4–5 minutes per side without moving until golden. Transfer to a plate.

In the same skillet, add shallots and cook 2 minutes until starting to soften.

Add garlic and ginger, stir constantly for 60 seconds until fragrant.

Stir in garam masala and chili powder for 30 seconds, then pour in coconut milk.
