Ingredients
- 8 pieces (about 2 lbs) boneless, skinless chicken thighs
- 6 cloves garlic cloves, minced
- 1.5 whole (juiced) lemon
- 1 tbsp sumac or red pepper flakes
- 1 tsp paprika
- 4 tbsp olive oil

Pat chicken thighs dry. Mix minced garlic, lemon juice, sumac, paprika, and olive oil in a bowl.

Toss chicken with the garlic mixture until well coated. Spread on a sheet pan in one layer.

Roast at 425°F for 16–18 minutes, stirring halfway. Chicken is done when edges are charred and internal temp reaches 165°F.
