Ingredients

  • 1.5 lb pork belly
  • 2 cups kimchi
  • 1 large onion
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • ½ tsp black pepper

    Slice the 1.5 lb pork belly into 1/4-inch thick pieces. Slice the 1 large onion into 1/2-inch rings. Pat the pork dry with paper towels.

    Heat a large skillet over medium-high heat. Add the 1 tbsp vegetable oil and swirl to coat. Place the pork slices in a single layer, working in batches if needed to avoid crowding.

    Cook the pork for 4-5 minutes per side until deeply golden and crispy at the edges. Season with the 1 tsp salt and 1/2 tsp black pepper. Transfer to a plate.

    In the same skillet, add the onion rings and cook for 2-3 minutes until they start to soften and char slightly.

    Add the 2 cups kimchi to the skillet with the onion. Cook for 3-4 minutes, stirring occasionally, until the kimchi is heated through and slightly caramelized.

    Return the pork to the skillet and toss everything together for 1 minute to combine. Serve hot, with extra kimchi on the side if desired.
