Ingredients
- 1 lb beef sirloin or ribeye, thinly sliced
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 1 medium sweet potato, peeled
- ½ large yellow onion
- 1 tbsp toasted sesame seeds (for garnish)

Combine soy sauce, brown sugar, sesame oil, and 1 minced garlic clove in a small bowl. Stir until sugar dissolves.

Add beef slices to the marinade, stir to coat, and let sit while you prep the vegetables.

Cut sweet potato and onion into 0.5-inch-thick half-moons. Thread beef strips (accordion-folded) and vegetable pieces alternately onto skewers.

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Working in batches, lay skewers flat and sear 3–4 minutes per side without moving. Edges should char and brown deeply.
