Ingredients
- 1 lb ground beef
- 1 medium onion
- ½ cup parsley
- 1 cup rice
- 1 tsp turmeric
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil

In a bowl, mix 1 lb ground beef with 1/2 tsp salt and 1/4 tsp black pepper. Shape into 4 oval patties and thread onto skewers.

Cook the skewers on a grill or grill pan over medium-high heat, turning occasionally, until browned and cooked through, about 10-12 minutes.

Meanwhile, rinse 1 cup rice under cold water. In a pot, heat 1 tbsp olive oil over medium, add rice and 1/2 tsp turmeric, stir for 1 minute until fragrant.

Add 2 cups water and 1/2 tsp salt to the rice. Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed and rice is tender, about 15-18 minutes.

Thinly slice the remaining 1/2 onion and chop the parsley. Fluff the rice with a fork.

Serve the rice in bowls, top with the cooked skewers, and garnish with sliced onion and chopped parsley. Drizzle with remaining 1 tbsp olive oil if desired.
