Ingredients

  • ¾ lb deli roast beef, thinly sliced
  • ½ cup ketchup
  • 3 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • ½ cup crispy fried onions
  • 3 cups coleslaw mix (shredded cabbage & carrot)

Instructions

    Stir ketchup, vinegar, brown sugar, and smoked paprika in a bowl until sugar dissolves, ~1 minute.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add beef slices in a single layer and sear without stirring until edges brown, ~2 minutes per side.

    Pour BBQ sauce over beef and toss until coated, then remove from heat, ~1 minute.

    Toss coleslaw mix with 1 tbsp vinegar and a pinch of salt; divide between plates.
