Ingredients

  • 1 lb chicken breast and large shrimp (mixed), cut into 1-inch cubes
  • ½ cup creamy peanut butter
  • ¼ cup coconut milk
  • 3 tbsp soy sauce
  • 2 tbsp tamarind paste (or lime juice)
  • 2 tbsp palm sugar (or brown sugar)
  • 3 cloves garlic, minced

Instructions

    Thread chicken and shrimp alternately onto metal skewers, dividing evenly.

    Whisk peanut butter, coconut milk, soy sauce, tamarind, sugar, and garlic until smooth.

    Brush satay generously with half the peanut sauce, coating all sides.

    Broil 4 inches from heat for 8–10 minutes, turning halfway, until chicken is cooked through.

    Brush remaining sauce over hot skewers until glossy.

    Serve immediately with extra sauce for dipping.
