Ingredients
- 1 lb boneless, skinless chicken thighs or shrimp
- 8 pieces bamboo skewers
- ½ cup natural peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp chili paste or sambal oelek

Soak bamboo skewers in water for 10 minutes. Pat chicken or shrimp dry with paper towels.

Thread chicken or shrimp onto skewers. Season both sides generously with salt and pepper.

Whisk peanut butter, soy sauce, lime juice, chili paste, and 3 tbsp water until smooth and pourable.

Heat a broiler or grill pan on high for 2 minutes. Lightly oil the surface.

Broil or grill skewers 3 inches from heat, 3 minutes per side, until edges char slightly and centers cook through.
