Ingredients

  • 1.5 cups all-purpose flour
  • ½ cup whole milk, warmed
  • 3 tbsp granulated sugar
  • ½ tsp instant yeast
  • 1 whole large egg
  • ½ cup fruit jam (plum or apricot preferred)
  • 1 quart neutral cooking oil, for frying

Instructions

    Whisk flour, 3 tbsp sugar, yeast, and a pinch of salt in a bowl. Add warm milk and egg, stir until shaggy dough forms.

    Knead with your hands in the bowl 3 minutes until smooth, tacky, and elastic. Let rest 8 minutes until puffy.

    Heat oil to 350°F in a heavy pot. Gently drop 1-tbsp dough balls into oil—fry 90 seconds per side until golden brown.

    Transfer donuts to paper towels. Once cool enough to touch, pierce the side with a small knife, wiggle to make a pocket.
