Ingredients

  • 12 oz pasta (penne, rotini, or fusilli)
  • 1.5 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, cubed
  • ⅓ cup olive oil
  • 2 tbsp red wine vinegar
  • 1.5 tsp Italian seasoning

Instructions

    Boil pasta in salted water until al dente, ~9 minutes. Drain and rinse under cold water until cool.

    While pasta cools, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.

    Transfer cooled pasta to a large bowl. Add cherry tomatoes and mozzarella.
