  • 1.5 cups corn (fresh, frozen, or canned)
  • 1 medium red bell pepper
  • ¼ medium red onion
  • 2 limes lime (juiced)
  • 3 tbsp olive oil
  • ¼ cup fresh cilantro (chopped)
