Ingredients
- 1 lb ground beef
- 1 tbsp mixed cumin, paprika, garlic powder, and black pepper
- 2 medium (about 1 lb total) bell peppers and red onion
- 1.5 cups brown rice (cooked)
- ½ cup tzatziki sauce (store-bought or plain yogurt + lemon + dill)
- 2 cups mixed greens with avocado
- 1 whole (halved) lemon

Mix ground beef with cumin, paprika, garlic powder, and salt. Form into 8 oblong patties and thread onto metal skewers (or soak wooden skewers 10 min first).

Cut bell peppers and onion into 1-inch chunks. Thread onto separate skewers, drizzle with oil, and season with salt and pepper.

Heat a grill pan or cast-iron skillet over medium-high until smoking. Sear beef skewers 4 minutes per side without moving — edges should char.

Push beef to one side. Add pepper skewers to the pan and sear 3 minutes per side until charred and tender.

Warm rice in a microwave or on a second burner. Arrange rice on plates, top with kebabs, peppers, and tzatziki.
