Ingredients
- 1.5 lb boerewors sausage
- 10 oz cherry tomatoes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh thyme or rosemary
- ½ whole lemon or lime

Coil the boerewors tightly into a spiral and secure with two toothpicks or skewers through the coil to hold its shape.

Heat a grill pan or cast iron skillet over medium-high heat for 2 minutes until it's smoking lightly.

Lay the sausage coil on the hot pan. Grill 6–7 minutes per side without moving, until the casing cracks and the meat is cooked through.

Push the sausage to the side of the pan. Toss tomatoes with 1 tbsp oil, garlic, and thyme, then spread on the hot surface.

Grill the tomatoes 3–4 minutes, shaking the pan occasionally, until the skins blister and start to split.

Transfer sausage to a plate. Squeeze lemon juice over both sausage and tomatoes, then serve hot.
