Ingredients
- 1 lb beef sirloin or chuck, cut into 1-inch cubes
- 1 lb potatoes, cut into 1/4-inch fries
- ⅓ cup tahini
- 1 whole lemon, juiced
- 1.5 tsp ground cumin
- 1 tsp sumac (optional, or sub paprika)
- ¼ cup fresh parsley, chopped

Pat beef dry with paper towels. Toss with salt, pepper, cumin, and sumac until well coated.

Thread beef onto two metal skewers, leaving 1/4-inch gaps between pieces. Set aside.

Heat 2 tbsp oil in a large skillet over medium-high until shimmering. Add fries in a single layer, stirring every 2 minutes, until golden and tender, ~12 minutes. Transfer to a plate.

Add 1 tbsp oil to the same skillet. Sear kebabs 2–3 minutes per side without moving until charred at edges.

Whisk tahini, lemon juice, 3 tbsp water, minced garlic, salt, and pepper until smooth and drizzle-able.

Slide kebabs onto plates beside fries. Drizzle tahini sauce over kebabs and garnish with parsley.
