- 1 lb chicken breast
- ¼ cup peanut butter
- 3 tbsp soy sauce
- 2 large eggs
- 3 tbsp vegetable oil

Cut the 1 lb chicken breast into thin strips and thread onto skewers. In a small bowl, mix 2 tbsp soy sauce with 1 tbsp oil; brush over the chicken.

Heat a grill pan or skillet over medium-high heat. Cook the chicken skewers for 4-5 minutes per side, until browned and cooked through (no pink inside). Set aside.

In the same pan, add 1 tbsp oil and scramble the 2 eggs until just set, about 2 minutes. Remove and set aside.
