Ingredients

  • 3 cups cooked rice
  • 1 lb chicken breast
  • ¼ cup peanut butter
  • 3 tbsp soy sauce
  • 2 large eggs
  • 3 tbsp vegetable oil

Instructions

    Cut the 1 lb chicken breast into thin strips and thread onto skewers. In a small bowl, mix 2 tbsp soy sauce with 1 tbsp oil; brush over the chicken.

    Heat a grill pan or skillet over medium-high heat. Cook the chicken skewers for 4-5 minutes per side, until browned and cooked through (no pink inside). Set aside.

    In the same pan, add 1 tbsp oil and scramble the 2 eggs until just set, about 2 minutes. Remove and set aside.

    Add remaining 1 tbsp oil to the pan, then add the 3 cups cooked rice and 1 tbsp soy sauce. Stir-fry for 3-4 minutes until the rice is hot and slightly crispy, then fold in the scrambled eggs.

    In a small bowl, whisk the 0.25 cup peanut butter with 2 tbsp water until smooth. Serve the fried rice topped with chicken skewers and drizzle with the peanut sauce.
