- 1 cup whole milk
- 2 count egg yolks
- 2.5 tbsp granulated sugar
- ½ tsp vanilla extract
- 2 count egg whites
- 1.5 tbsp granulated sugar
- ¼ tsp salt

Heat milk in a saucepan over medium until a few bubbles form at the edge, ~4 minutes.

Whisk egg yolks with 2.5 tbsp sugar until pale yellow, about 90 seconds.

Pour hot milk into yolks in a thin stream, whisking constantly to temper without scrambling.

Strain custard through a fine sieve into a bowl, stir in vanilla, and set aside to cool.

Whip egg whites and salt in a clean bowl until soft peaks form, ~2 minutes.

Sprinkle in 1.5 tbsp sugar and whip until stiff peaks form and meringue is glossy, ~1 minute.

Bring a shallow pan of salted water to a gentle simmer. Spoon meringue quenelles onto the surface.
