Ingredients

  • 1 cup dried green or brown lentils
  • 1 medium onion
  • 1 large tomato
  • 1 tablespoon sweet paprika
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    Rinse lentils and pick over for debris; set aside.

    Dice onion and tomato; heat oil in a pot over medium heat.

    Sauté onion until soft, about 5 minutes, then stir in paprika.

    Pour in broth and lentils; bring to a boil, then reduce heat.
