Hungarian beef stew

Ingredients

  • 2 lb beef chuck
  • 2 medium onion
  • 3 tbsp sweet paprika
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1.5 tsp salt
  • ½ tsp black pepper
  • 3 tbsp vegetable oil
  • 12 pieces potato croquettes
  • 2 stalks green onions

Instructions

    Cut beef into 1-inch chunks and season with salt and pepper.

    Heat oil in a heavy pot and brown beef in batches until deep brown.

    Add chopped onions and cook until soft, about 5 minutes.

    Stir in paprika and tomato paste, cook for 1 minute.

    Pour in beef broth, bring to a boil, then simmer covered for 1.5 hours.

    Uncover and simmer until sauce thickens, about 30 minutes.

    Fry croquettes until golden and serve with stew, garnished with green onions.
