Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 2 pieces sandwich bread or rolls
  • 2 leaves lettuce
  • ½ medium tomato

Instructions

    Slice chicken breast horizontally to create two thin cutlets of even thickness.

    Stir honey and Dijon mustard together in a small bowl until smooth.

    Slice tomato into thin rounds. Season chicken lightly with salt and pepper.

    Heat oil in a 10-inch skillet over medium-high until it shimmers, about 90 seconds.

    Place chicken in the pan. Sear 5–6 minutes without moving until golden brown.

    Flip chicken and sear the other side 4–5 minutes until cooked through.

    Brush the honey-mustard glaze over both sides of chicken. Toss to coat evenly.

    Toast the bread until lightly golden, about 2 minutes in a toaster or skillet.

    Spread any remaining honey-mustard glaze on the toasted bread if desired.

    Layer lettuce, tomato slice, and one chicken cutlet on each sandwich.
