Ingredients
- 1 lb chicken breast, boneless and skinless
- 3 tbsp honey
- 2 tbsp Dijon mustard
- 2 pieces sandwich bread or rolls
- 2 leaves lettuce
- ½ medium tomato

Slice chicken breast horizontally to create two thin cutlets of even thickness.

Stir honey and Dijon mustard together in a small bowl until smooth.

Slice tomato into thin rounds. Season chicken lightly with salt and pepper.

Heat oil in a 10-inch skillet over medium-high until it shimmers, about 90 seconds.

Place chicken in the pan. Sear 5–6 minutes without moving until golden brown.

Flip chicken and sear the other side 4–5 minutes until cooked through.
