Ingredients

  • 1.5 lb boneless, skinless chicken thighs
  • 3 tbsp honey
  • 2 tbsp fish sauce
  • 4 clove garlic cloves, minced
  • 1 whole lime
  • 1 tbsp neutral cooking oil

Instructions

    Pat chicken dry with paper towels. Season both sides generously with salt and black pepper.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear chicken thighs 4–5 minutes per side without moving until golden brown. Transfer to a plate.

    Add minced garlic to the same skillet. Cook 30 seconds until fragrant, stirring constantly.

    Whisk in honey and fish sauce. Return chicken to the skillet and turn to coat. Simmer 6–8 minutes until glaze thickens and clings to chicken.

    Squeeze lime over the top. Serve immediately over rice, with extra glaze spooned over.
