Ingredients

  • 1.2 lb chicken thighs, skin-on boneless
  • 3 tbsp honey
  • ¾ lb potatoes, 1-inch cubes
  • 8 cloves garlic cloves, peeled whole
  • 4 cups mixed greens (spinach, bok choy, or Chinese broccoli)
  • 1 tbsp fish sauce

Instructions

    Toss potatoes with 1 tbsp oil, salt, and pepper on a sheet pan. Spread in a single layer and roast at 425°F.

    Mix honey, fish sauce, and 1 tbsp oil in a small bowl. Season chicken thighs with salt and pepper on both sides.

    After 8 minutes, push potatoes to the sides and add chicken thighs skin-side up in the center with whole garlic cloves.

    Brush honey mixture over chicken thighs. Roast for 10 more minutes until skin is caramelized and chicken reaches 165°F.

    Toss greens with 1 tbsp oil and a pinch of salt. Scatter over the pan in the last 1 minute of cooking.

    Serve hot straight from the pan, dividing chicken, potatoes, greens, and garlic cloves between plates.
