Ingredients

  • 8 pieces (about 2 lbs) chicken drumsticks
  • ⅓ cup honey
  • ½ cup bbq sauce
  • 2 medium, thinly sliced cucumbers
  • ½ medium, thinly sliced red onion
  • 2 tbsp white vinegar
  • 1 pinch salt and pepper

Instructions

    Pat drumsticks dry with paper towels, then season generously with salt and pepper on all sides.

    Arrange drumsticks on a sheet pan in a single layer. Roast at 425°F for 12 minutes until edges begin to brown.

    Stir honey and BBQ sauce together, then brush generously over drumsticks. Return to oven for 10 minutes.

    Toss cucumbers and red onion with vinegar and a pinch of salt in a bowl. Set aside until ready to serve.
