Homemade Sausage McMuffin

A crispy-bottomed English muffin sandwich with a warm pork sausage patty, melted cheddar, and a runny egg. Toast, cook, and assemble in under 15 minutes.

Ingredients

  • 2 patties pork sausage patties (about 2 oz each)
  • 2 muffins English muffins
  • 2 large eggs
  • 2 slices cheddar cheese, sliced
  • 1 tablespoon butter
  • 1 pinch salt and pepper

Instructions

    Place a 10-inch nonstick skillet over medium-high heat and wait 2 minutes until the pan is hot enough that a drop of water sizzles and evaporates immediately.

    Lay the two sausage patties in the hot skillet, spacing them apart. Do not move them; let them cook undisturbed until the bottom is dark brown and crispy, about 3–4 minutes.

    Flip each sausage patty using a spatula and cook the second side until browned, about 2 more minutes.

    Slide each cooked sausage patty onto a clean plate. They should be set aside now; you will return to them after cooking the eggs.

    While the skillet is still warm, split each English muffin horizontally in half using a serrated bread knife. Place all four halves cut-side down in the warm skillet and lightly toast until the cut surface is golden brown, about 1–2 minutes.

    Remove the toasted muffin halves to a clean surface. Wipe out the skillet with a paper towel, leaving a light coating of residual oil.

    Return the skillet to medium heat. Add 0.5 tablespoons of butter and let it melt and foam for about 30 seconds, tilting the pan so it coats the bottom evenly.

    Crack one egg into a small bowl, then gently pour it into the skillet. Immediately crack the second egg into the same bowl and pour it into the skillet next to the first, spacing them apart.

    Cook the eggs without moving them until the whites are set and opaque but the yolk still jiggles slightly when you nudge the pan, about 3–4 minutes.

    Slide one fried egg onto the toasted cut-side of a muffin bottom half using a spatula.

    Lay one sausage patty on top of the egg, then place one cheddar slice on top of the sausage. The residual heat will soften the cheese.

    Sprinkle a pinch of salt and pepper over the cheese, then top with the corresponding muffin top half and press gently.

    Repeat the assembly process with the second egg, remaining sausage patty, cheddar slice, and muffin halves to make the second sandwich.

    Serve both sandwiches immediately while the cheese is still warm and slightly melted.
