Herring Sandwich

Ingredients
- 4 fillets pickled herring fillets
- 2 soft white rolls
- 1 small red onion
- 1 tbsp butter
- 2 tbsp fresh dill

Thinly slice the 1 small red onion into rings and place in a small bowl of cold water for 5 minutes to mellow the bite.

Drain the onion and pat dry with paper towels.

Slice the 2 soft white rolls in half horizontally and spread the cut sides with the 1 tbsp butter.

Place the rolls cut-side up on a baking sheet and toast under the broiler for 2-3 minutes until golden and crisp at the edges.

Lay 2 pickled herring fillets on the bottom half of each roll, folding them to fit.

Top the herring with the sliced onion and sprinkle with the 2 tbsp fresh dill.
