- 4 chops lamb chops
- ½ cup fresh parsley
- 2 cloves garlic
- ½ cup panko breadcrumbs
- 2 tbsp olive oil
- 2 tbsp butter

Preheat oven to 400°F. Pat the 4 lamb chops dry and season both sides with salt and pepper.

In a small bowl, mix 0.5 cup parsley, 2 minced garlic cloves, 0.5 cup panko, and 1 tbsp olive oil until crumbly.

Press the herb mixture onto both sides of the chops. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high.

Sear the chops for 2 minutes per side until golden brown, then add 2 tbsp butter to the pan and transfer to the oven.

Roast for 6-8 minutes until the crust is crisp and the chops are pink inside (145°F for medium-rare). Serve with roasted potatoes.
