Ingredients

  • 4 cups stale bread
  • ½ cup fresh parsley
  • ½ cup pitted green olives
  • 2 large eggs
  • ½ cup all-purpose flour
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    In a large bowl, combine 4 cups stale bread (torn into small pieces), 0.5 cup chopped parsley, and 0.5 cup chopped olives. Mix well.

    In a small bowl, beat 2 eggs with 0.5 tsp salt and 0.25 tsp black pepper. Pour over the bread mixture and stir until evenly moistened.

    Sprinkle 0.5 cup flour over the mixture and stir until a sticky dough forms. If too dry, add 1-2 tbsp water.

    With wet hands, shape the mixture into 12 balls, each about 1.5 inches in diameter.

    Heat 0.25 cup olive oil in a large skillet over medium heat. Add the balls in a single layer, working in batches if needed.

    Cook the balls, turning occasionally, until golden brown on all sides, about 8-10 minutes. Drain on paper towels.
