Ingredients
- 8 slices ham slices
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp sugar
- 1 tbsp lemon juice
- 2 tbsp water
Instructions
- 1
In a small saucepan, combine the 2 cups mixed berries, 2 tbsp sugar, 1 tbsp lemon juice, and 2 tbsp water. Bring to a simmer over medium heat, stirring occasionally, until the berries soften and release their juices, about 5-7 minutes.
- 2
Continue to cook the compote over medium-low heat, mashing the berries with a fork, until it thickens to a jam-like consistency, about 5 more minutes. Remove from heat and let cool slightly.
- 3
Lay the 8 ham slices flat on a cutting board. Spoon about 1 tablespoon of the berry compote onto each slice, spreading it evenly.
- 4
Roll each ham slice tightly from one end to the other, enclosing the compote. If needed, secure with a toothpick.
- 5
Arrange the roll-ups on a serving plate, seam-side down. Serve warm or at room temperature, with any extra compote on the side for dipping.
