Ingredients

  • 2 large eggs
  • 2 links breakfast sausage links
  • 1 medium ripe plantain
  • ½ cup refried black beans
  • ¼ cup pickled vegetables (escabeche)
  • ½ cup mushrooms
  • 1 medium tomato
  • 2 slices crusty bread
  • 2 tablespoons salsa roja
  • 1 cup coffee

Instructions

    Slice plantain into 1/2-inch rounds and fry in oil until golden and caramelized.

    Cook sausage links in a skillet until browned and cooked through.

    In the same skillet, fry eggs sunny-side up or to your liking.

    Warm refried beans in a small pot, stirring occasionally.

    Sauté mushrooms in a little oil until tender and lightly browned.

    Plate everything with pickled vegetables, tomato slices, and bread with salsa.
