Ingredients
- 1 lb ground beef
- 4 large eggs
- 1 medium onion
- 2 cloves garlic
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 2 tbsp fresh parsley

Heat 1 tbsp olive oil in a large skillet over medium heat. Add 1 sliced onion and cook until soft and golden, about 6 minutes.

Add 2 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly.

Add 1 lb ground beef, 1 tsp salt, and 1/2 tsp black pepper. Cook, breaking up the meat, until browned and no longer pink, about 8 minutes.

Remove the beef mixture to a plate. In the same skillet, heat the remaining 1 tbsp olive oil over medium heat.

Crack 4 eggs into the skillet. Cook until whites are set and edges are crispy, about 3 minutes for runny yolks.

Return the beef to the skillet, nestling the eggs on top. Cook for 1 minute to warm through.
