Ingredients
- 1.25 lb pork shoulder steaks (1.5 inches thick)
- 3 tbsp fish sauce
- 1 whole lime (juiced + zested)
- 1 medium shallot, minced
- 2 clove garlic, minced
- 1 tbsp granulated sugar

Whisk fish sauce, lime juice, lime zest, shallot, garlic, and sugar in a bowl until sugar dissolves.

Pat pork steaks dry. Brush both sides generously with the marinade, reserving about 2 tbsp.

Heat a heavy skillet over medium-high until smoking, about 2 minutes. Lay pork steaks in the pan without moving.

Sear without stirring until dark brown and crusty, 2–3 minutes. Flip once and sear the second side until cooked through.

Drizzle reserved marinade over the pork. Let it glaze for 30 seconds, then transfer to a plate.
