Ingredients
- 1.5 lb boneless skinless chicken thighs
- ½ cup plain yogurt
- 2 tbsp garam masala
- 3 cloves garlic
- 2 tbsp lemon juice
- 1 tsp salt
- 12 whole cherry tomatoes
- 1 medium red onion
Instructions
- 1
Cut the 1.5 lb chicken thighs into 1.5-inch chunks. In a bowl, mix the 0.5 cup yogurt, 2 tbsp garam masala, 3 minced garlic cloves, 2 tbsp lemon juice, and 1 tsp salt.
- 2
Add the chicken to the marinade, toss to coat, and let sit for at least 15 minutes (or up to 2 hours in the fridge).
- 3
While the chicken marinates, soak 8 wooden skewers in water for 10 minutes. Cut the 1 red onion into 1-inch wedges.
- 4
Thread the chicken, 12 cherry tomatoes, and onion wedges onto the skewers, alternating pieces.
- 5
Preheat a grill or grill pan to medium-high. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is charred at the edges and cooked through (no pink inside).
- 6
Rest the skewers for 5 minutes, then serve with lime wedges and a sprinkle of extra garam masala if you like.
