- 1 lb potatoes, peeled and cubed
- 2 cups broccoli florets
- 1 cup carrots, sliced
- 1 medium zucchini, sliced
- 2 tbsp balsamic vinegar

Place the 1 lb cubed potatoes in a pot, cover with salted water, and boil until fork-tender, about 15 minutes. Drain and mash with 2 tbsp butter and 1/4 cup milk (or water) until smooth; season with salt and pepper.

While potatoes cook, heat a grill or grill pan over medium-high. Season the 1 lb steak with salt and pepper. Grill for 4-5 minutes per side for medium-rare, or until it reaches your desired doneness. Let rest for 5 minutes before slicing.
