Ingredients

  • 1 lb steak (such as sirloin or ribeye)
  • 1 lb potatoes, peeled and cubed
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 medium zucchini, sliced
  • 2 tbsp balsamic vinegar

    Place the 1 lb cubed potatoes in a pot, cover with salted water, and boil until fork-tender, about 15 minutes. Drain and mash with 2 tbsp butter and 1/4 cup milk (or water) until smooth; season with salt and pepper.

    While potatoes cook, heat a grill or grill pan over medium-high. Season the 1 lb steak with salt and pepper. Grill for 4-5 minutes per side for medium-rare, or until it reaches your desired doneness. Let rest for 5 minutes before slicing.

    In a large skillet, heat 1 tbsp olive oil over medium-high. Add the 2 cups broccoli, 1 cup carrots, and 1 sliced zucchini. Cook, stirring, until tender-crisp, about 6-8 minutes. Season with salt and pepper.

    Slice the rested steak and serve with the mashed potatoes and vegetables. Drizzle everything with the 2 tbsp balsamic vinegar and sprinkle with fresh rosemary if you have it.
