- 2 tablespoons mixed fresh herbs (parsley, thyme, rosemary), chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 1 red bell pepper, roasted and peeled
- 8 ounces baby potatoes, halved
