Ingredients

  • 1.5 lb steak (such as sirloin or ribeye)
  • 1 cup rice
  • 2 cups water
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup fresh herbs (such as parsley or cilantro)
  • 2 tbsp edible flowers (optional)

Instructions

  1. 1

Pat the 1.5 lb steak dry with paper towels and season both sides with 1 tsp salt and 0.5 tsp black pepper. Let it sit at room temperature for 15 minutes.

  2. 2

In a medium saucepan, combine 1 cup rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer until water is absorbed and rice is tender, about 18 minutes. Fluff with a fork.

  3. 3

Heat 2 tbsp olive oil in a grill pan or skillet over high heat until shimmering. Place the steak in the pan and cook without moving for 4-5 minutes per side for medium-rare, or until a thermometer reads 130°F. Adjust time for desired doneness.

  4. 4

Transfer the steak to a cutting board and let it rest for 5 minutes. This keeps the juices inside.

  5. 5

Slice the steak against the grain into thin strips. Serve over the cooked rice, garnished with 0.25 cup fresh herbs and 2 tbsp edible flowers if using.
