Grilled Steak with Herb Butter and Onions

Ingredients
- 2 steaks (about 8 oz each) steak (ribeye or sirloin)
- 1 large, sliced onion
- 3 tbsp butter
- 2 tbsp, chopped fresh parsley
- 4 cups mixed salad greens
- 2 tbsp olive oil

Pat the 2 steaks dry and season both sides with salt and pepper. Let them sit at room temperature for 10 minutes.

Heat 1 tbsp olive oil in a skillet over high heat. Add the steaks and cook for 3-4 minutes per side for medium-rare, until browned and firm to the touch.

Remove steaks to a plate and let rest. In the same skillet, add 1 tbsp olive oil and the 1 sliced onion. Cook over medium heat, stirring, until soft and golden, about 8 minutes.

Mix the 3 tbsp butter with the 2 tbsp parsley. Top each steak with a spoonful of herb butter and the fried onions.

Serve the steaks with the 4 cups mixed salad greens tossed with the remaining olive oil and a pinch of salt.
