Ingredients
- 1 pound flank steak
- 2 whole lime
- 1 bunch cilantro
- 1 whole red bell pepper
- 1 whole yellow bell pepper
- 1 small red onion
- 1 head romaine lettuce
- 3 tablespoons olive oil

Pat the 1 lb flank steak dry and season both sides with salt and pepper. Let it sit at room temperature for 10 minutes.

Heat a grill or grill pan over high heat. Cook the steak for 4-5 minutes per side for medium-rare, until a thermometer reads 130°F and the outside is nicely charred.

Transfer the steak to a cutting board and let it rest for 5 minutes. Meanwhile, whisk the juice of 1 lime with 2 tbsp olive oil, salt, and pepper to make the dressing.

Slice the 1 red bell pepper, 1 yellow bell pepper, and 1 small red onion into thin strips. Tear the 1 head of romaine into bite-sized pieces and place in a large bowl.

Add the sliced peppers and onion to the bowl, drizzle with the dressing, and toss to coat. Slice the rested steak thinly against the grain.

Top the salad with the sliced steak, the remaining 1 tbsp olive oil, and the juice of the second lime. Roughly chop the cilantro and sprinkle over the top.
