Ingredients

  • 4 fillets (6 oz each) salmon fillets
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp, chopped fresh dill
  • 2 tbsp, chopped fresh parsley
  • 1 medium, cut into wedges lemon

Instructions

    Pat the 4 salmon fillets dry with paper towels. Brush both sides with 1 tbsp of the olive oil and season evenly with the 1 tsp salt and 1/2 tsp black pepper.

    In a small bowl, mix the 2 tbsp chopped dill and 2 tbsp chopped parsley with the remaining 1 tbsp olive oil to make a herb paste.

    Preheat your grill to medium-high heat (about 400°F). If using a grill pan, lightly oil it to prevent sticking.

    Place the salmon fillets skin-side down on the grill. Cook for 4-5 minutes without moving, until the skin is crisp and releases easily.

    Flip the fillets and spread the herb paste over the top. Grill for another 3-4 minutes, until the salmon is opaque and flakes easily with a fork.

    Remove the salmon from the grill and let it rest for 2 minutes. Serve hot with lemon wedges on the side for squeezing over.

    Optional: Add a pinch of smoked paprika or garlic powder to the herb paste for extra depth if you have them.
