Ingredients

  • 2 6 oz each salmon fillets
  • 2 tbsp olive oil
  • 1 medium orange
  • ½ cup plain yogurt
  • 2 tbsp fresh dill
  • 1 to taste salt and pepper

Instructions

  1. 1

Pat the 2 salmon fillets dry and brush with 1 tbsp olive oil. Season both sides with salt and pepper.

  2. 2

Heat a grill pan or skillet over medium-high. Place the salmon skin-side down and cook until the skin is crisp and the flesh turns opaque, about 6-8 minutes. Flip and cook 2-3 minutes more until just flaky.

  3. 3

While the salmon cooks, mix 0.5 cup yogurt with 1 tbsp chopped dill and a pinch of salt. Set aside.

  4. 4

Slice the orange into thin rounds. Cut one round into small wedges for garnish.

  5. 5

Serve the salmon with a dollop of the yogurt sauce, orange slices, and sprinkle with the remaining 1 tbsp dill. Drizzle with the remaining 1 tbsp olive oil if desired.
