Ingredients
- 4 fillets (6 oz each) salmon fillets
- 1 large, diced avocado
- 1 medium, diced tomato
- 1 medium, sliced zucchini
- ½ small, finely chopped red onion
- ¼ cup, chopped fresh cilantro
- 1 juiced lime
- 2 tbsp olive oil

Preheat your grill or grill pan to medium-high heat. Brush the 4 salmon fillets and 1 sliced zucchini with 1 tbsp of the olive oil and season with salt and pepper.

Grill the salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes until the fish flakes easily with a fork and reaches 145°F. Grill the zucchini slices for 2-3 minutes per side until tender and charred.

In a medium bowl, combine the diced avocado, diced tomato, chopped red onion, and chopped cilantro. Drizzle with the remaining 1 tbsp olive oil and the juice of 1 lime. Gently toss to combine and season with salt to taste.
