Ingredients
- 4 6 oz each salmon fillets
- 3 tbsp olive oil
- 1 whole lemon
- 1 tsp salt
- ½ tsp black pepper
- 5 oz arugula

Pat the 4 salmon fillets dry with paper towels. Rub both sides with 1 tbsp olive oil, 1 tsp salt, and 0.5 tsp black pepper.

Heat a grill or grill pan over medium-high heat. Place the salmon skin-side down and cook for 4-5 minutes, until the skin is crisp and releases easily.

Flip the salmon and cook for another 3-4 minutes, until the flesh is opaque and flakes with a fork. Remove from heat and let rest for 2 minutes.

In a large bowl, whisk the remaining 2 tbsp olive oil with the juice of 1 lemon. Add the 5 oz arugula and toss to coat.

Divide the arugula among 4 plates. Top each with a salmon fillet. Serve immediately, with extra lemon wedges if desired.
