Ingredients

  • 4 6-oz salmon fillets
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 whole lemon

Instructions

  1. 1

Pat the 4 salmon fillets dry with paper towels. Brush both sides with 2 tbsp olive oil and season with 1 tsp salt and 1/2 tsp black pepper.

  2. 2

Preheat a grill or grill pan to medium-high heat (about 400°F). The grill is ready when you can hold your hand 5 inches above the grate for only 2-3 seconds.

  3. 3

Place the salmon fillets skin-side down on the grill. Cook without moving for 4-6 minutes, until the skin is crisp and the fish releases easily from the grate.

  4. 4

Flip the salmon and cook for another 3-4 minutes, until the flesh is opaque and flakes easily with a fork, reaching an internal temperature of 145°F.

  5. 5

Remove the salmon from the grill. Squeeze the juice of 1 lemon over the top and let rest for 2 minutes before serving.

  6. 6

Serve hot, with extra lemon wedges if desired.
