Ingredients
- 4 6-oz salmon fillets
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 whole lemon

Pat the 4 salmon fillets dry with paper towels. Brush both sides with 2 tbsp olive oil and season with 1 tsp salt and 1/2 tsp black pepper.

Preheat a grill or grill pan to medium-high heat (about 400°F). The grill is ready when you can hold your hand 5 inches above the grate for only 2-3 seconds.

Place the salmon fillets skin-side down on the grill. Cook without moving for 4-6 minutes, until the skin is crisp and the fish releases easily from the grate.

Flip the salmon and cook for another 3-4 minutes, until the flesh is opaque and flakes easily with a fork, reaching an internal temperature of 145°F.
