Ingredients

  • 4 fillets salmon fillets
  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 3 medium carrots
  • 3 tablespoons olive oil
  • 1 whole lemon
  • 1 tablespoon sesame seeds
  • 1 teaspoon salt

Instructions

  1. 1

Preheat your grill to medium-high heat (about 400°F). If using a grill pan, lightly oil it.

  2. 2

In a large bowl, toss the 3 cups broccoli florets, 3 cups cauliflower florets, and 3 sliced carrots with 2 tablespoons olive oil and 1/2 teaspoon salt.

  3. 3

Grill the vegetables in a single layer for 10-12 minutes, turning occasionally, until they are charred and tender.

  4. 4

Brush the 4 salmon fillets with the remaining 1 tablespoon olive oil and sprinkle with the remaining 1/2 teaspoon salt.

  5. 5

Place the salmon on the grill, skin-side down, and cook for 4-6 minutes per side, until the fish flakes easily with a fork.

  6. 6

Serve the salmon with the roasted vegetables, squeeze the juice of 1 lemon over everything, and sprinkle with 1 tablespoon sesame seeds.

  7. 7

Garnish with fresh parsley if desired.
