Ingredients

  • 1 lb pork shoulder or pork chops
  • 2 cups cooked jasmine rice
  • ½ cup fresh cilantro
  • 2 whole lime
  • 3 cloves garlic
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil

Instructions

    In a small bowl, mix 2 tbsp fish sauce, 1 tbsp brown sugar, 1 tbsp vegetable oil, and 2 minced garlic cloves. Pour over 1 lb pork and let marinate for 10 minutes.

    Heat a grill or grill pan over medium-high. Cook the pork for 4-5 minutes per side, until charred and cooked through (internal temp 145°F).

    While pork cooks, make the sauce: combine juice of 1 lime, remaining 1 minced garlic clove, and 1 tbsp fish sauce in a small bowl. Stir in 1 tbsp chopped cilantro.

    Slice the pork thinly against the grain. Serve over 2 cups cooked rice.

    Top with remaining cilantro, lime wedges, and drizzle with the sauce. Serve with extra lime on the side.
