- 1 lb pork tenderloin
- 8 oz mozzarella cheese
- ¼ cup fresh oregano
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Cut the 1 lb pork tenderloin into 1-inch cubes and the 8 oz mozzarella into 1-inch cubes. In a bowl, toss pork with 2 tbsp olive oil, 1 tsp salt, and 0.5 tsp black pepper.

Thread pork, cheese, and fresh oregano leaves onto skewers, alternating pieces. Use 4-5 pieces of pork per skewer, with cheese and herbs between.

Preheat grill to medium-high. Place skewers on grill and cook, turning occasionally, until pork is browned and cooked through and cheese is melted and blistered, about 10-12 minutes.
