Ingredients

  • 1 lb pork tenderloin
  • 1 loaf baguette
  • 1 medium tomato
  • ½ cup fresh parsley
  • 3 tbsp soy sauce
  • 1 tsp chili flakes

Instructions

  1. 1

Slice the 1 lb pork tenderloin into 1/2 inch thick medallions. In a bowl, toss with 3 tbsp soy sauce and 1 tsp chili flakes; let sit while you prep the rest.

  2. 2

Heat a grill pan or skillet over medium-high. Cook the pork medallions for 3-4 minutes per side, until browned and cooked through (no pink inside).

  3. 3

Slice the baguette lengthwise and toast it in the same pan for 1-2 minutes, until lightly golden and crisp.

  4. 4

Slice the tomato into thin rounds. Fill the baguette with the grilled pork, tomato slices, and fresh parsley leaves.

  5. 5

Serve with extra soy sauce mixed with chili flakes for dipping, if desired.
