Ingredients

  • 1 pound paneer
  • 2 medium bell pepper
  • 1 medium red onion
  • ½ cup plain yogurt
  • 2 teaspoons garam masala
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • ¼ cup fresh cilantro

Instructions

  1. 1

Cut the 1 lb paneer, 2 bell peppers, and 1 red onion into 1-inch chunks. In a bowl, mix 0.5 cup yogurt, 2 tsp garam masala, 2 tbsp lemon juice, and 2 tbsp oil until smooth.

  2. 2

Add the paneer and vegetables to the marinade, tossing to coat evenly. Let sit for 10 minutes while you preheat the grill to medium-high.

  3. 3

Thread the paneer and vegetables onto skewers, alternating pieces. Reserve any extra marinade for basting.

  4. 4

Grill the skewers for 8-10 minutes, turning every 2-3 minutes, until the paneer is golden and charred at the edges and the vegetables are tender.

  5. 5

Brush with leftover marinade during the last 2 minutes of grilling. Remove from heat and sprinkle with 0.25 cup chopped cilantro before serving.

  6. 6

Serve hot with naan or rice and a side of chutney, if desired.
