Ingredients
- 12 whole fresh oysters
- 1 small red chili
- 2 tablespoons fresh parsley
- 1 tablespoon olive oil
- ¼ teaspoon salt

Shuck the 12 oysters, keeping the bottom shells and juices. Discard the top shells and any shell fragments.

Finely chop the 1 small red chili and 2 tbsp fresh parsley. In a small bowl, mix with 1 tbsp olive oil and 0.25 tsp salt.

Place the oysters on a hot grill, flat side down. Grill until the edges curl and the juices bubble, about 3-4 minutes.

Remove the oysters from the grill and spoon the chili-herb mixture over each one. Serve immediately.
